Cucumber Dill Salad
4 cucumbers, peeled and thinkly sliced
1 tablespoon, plus 2 teaspoons salt, divided
1 cup vinegar
1+1/2 cups sour cream
1 teaspoon sugar substitute
1/4 cup chopped fresh chives
1/4 cup chopped fresh dill
paprika - to taste
Combine cucumbers, 1 tbsp. salt, and vinegar. Cover with a
plate. Chill for 2-3 hours.
Combine sour cream, 2 tsp. salt, sugar
substitute, and chives. Drain cucumbers. Turn into serving
bowl. Reserve a handful of dill. Add remaining dill to cucumber
mixture. Toss. Pour sour cream mixture over top. Toss. Sprinkle
with paprika and reserved dill. Chill before serving.
Serves 8.
