Low Carb Chicken Tenders
Ingredients:
2 pounds chicken tenders (I use dark meat)
2 eggs
pork rinds
any herbs you desire
1/4 cup low carb bake mix (optional)
coconut oil -- to fry
Crush the pork rinds til they look like crumbs. Add spices
and bake mix to crumbs. Dip chicken in eggs then roll in crumbs.
Fry in coconut oil until crispy.
